My favorite winter squash is butternut squash because it is extremely versatile and very tasty. Butternut squash is also an excellent source of vitamins A and C as well as potassium and fiber. This soup is perfect in the fall and winter and satisfying. I serve this soup with a salad and homemade cheddar cheese biscuits.

Butternut squash, onion, sage, thyme, vegetable boullion

Wash, peel and dice squash
Bake squash with sliced onion until tender
Add bouillon cube, herbs and hot water
Cook for 20 minutes and then puree
Enjoy!
